Whether you're entertaining friends over a weekend barbie, or planning a more casual meal for two, this salmon recipe could not be simpler. Here we combine a fresh Atlantic salmon fillet with a delicious homemade dill sauce.

Tip
Salmon tastes great off a gas stove top or the BBQ, but they are even better when cooked over a wood fire. A wood fire is perfect for fish because the meat can quickly pick up a subtle, smoky flavours.
Ingredients
- 4 Atlantic salmon fillets (200g per person)
- 1/2 cup sour cream
- 1 1/2 tbsp Dijon-style prepared mustard
- 2 tbsp lemon juice
- 2 tsp chopped fresh dill
- Sea salt and cracked black pepper to taste
Method
1. Whisk together sour cream, mustard, lemon juice and dill.
2. Rub both sides of salmon fillets with remaining lemon juice and season with salt and pepper. Grill for 3-4 minutes each side.
3. Top each salmon fillet with dill sauce and serve with boiled baby potatoes.
