Tip 

When choosing the best asparagus be sure that tips are tightly furled and perky, rather than limp. The shoots should also be straight and firm.

Ingredients

  • 500g asparagus
  • 1 1/2 tbsp olive oil
  • 1 tsp sea salt

Method

1. Preheat oven to 200°C.

2. Cut off the woody bottom part of the asparagus spears and discard.

3. Place asparagus on a baking sheet and then drizzle with olive oil and sprinkle with salt. Roll the asparagus around until they are evenly coated.

4. Roast for 10-15 minutes, depending on the thickness of your stalks and how tender you like them.

5. Remove from oven and serve with lime wedges or a light vinaigrette.
